This homemade salad dressing is very healthy, low calorie, allergen free and of course vegetarian. And it takes literally 2 minutes to make.
Green salads are a huge part of my daily meals, for obvious reasons.
A few quick things first:Personally I NEVER use store bought salad dressings.
1. For those of us with gluten intolerance issues, you just never know what additives they may have put in the salad dressing that are not listed in the ingredient list.
You know, in the US it's a legal requirement to list certain allergens but not all gluten grains are required to be disclosed. They just have to disclose wheat.
2. Most salad dressings are made with too much crap - by crap I mean sweeteners and coloring agents - a lot of which they can call "natural" just because they were at one time existing as a natural substance.
But some of these "natural" substances have been substantially changed from their original natural state.
Next time you're at Walmart, look at the range of salad dressings and you'll see that almost 90% of them, if not all, have high fructose corn syrup.
Did you know high fructose corn syrup is now passed off as natural? What?!?
And if you're vegetarian/vegan, you'll be surprised what animal products are sneaked into innocent looking non-meat foods. A couple I can think of are glycerin and gelatin.
3. Fattening - Most of the salad dressings out there are high in calories- most of which come from (bad) fats.
A typical salad dressing, for example, Hidden Valley has 140 calories per serving. Of those, 130 are from fat!
And don't even get me started on what else is in this salad dressing - Monosodium glutamate, (unnamed) artificial flavors , spices (always a red herring! why not just name the spices?), phosphoric acid......I give up!
Anyway, to cut the long story short :), here's how to make an easy and good for you vegetarian gluten free salad dressing.
You will need:
Cut the grapefruit in half width-wise. Squeeze the juice out of the grapefruit into a medium size bowl - I love grapefruit cuz it's super juicy.
In the bowl, whisk the grapefruit juice, lemon juice, olive oil, garlic, paprika and pepper. I normally use a fork to whisk for about 30 seconds.
Voila! There's your healthy, yummy, all natural, gluten free, allergen free, vegetarian homemade salad dressing!
If you can't find grapefruits (they tend to be quite seasonal) you can use oranges as a substitute, but if you use oranges, then up the lemon juice to 2 tbs.
